I was asked by a dear friend of mine how to make the cucumber salad that she saw in my lunch the other day. I thought that if she wanted to know perhaps some of my other followers would too!

Greek Cucumber and Garbanzo Salad
1 can of garbanzo beans, drained
2 cucumbers
1 red pepper (or yellow, or orange)
1 medium red onion
1 1/2 tbsp olive oil
2 tbsp lemon juice
2 tsp fresh oregano
Salt and pepper to taste

Yields about 5 cups

Dice all the vegetables. I cut the cucumber around the seed core so I just get the fleshy part. I like them about a centimeter diced but you can make it as large or small as you like. Add the olive oil, lemon juice, minced oregano, salt and pepper and mix it up.

It takes less than ten minutes to prepare something vegan and gluten free for your end of summer barbecues. It tastes better when you let it sit for about an hour. I hope yinz have a great weekend!
